So we're having a beach event in FL this coming May; I was curious if anyone's had experience with leather in salt water/air. If there are any precautions I should take to protect the leather, etc...

The air shouldn't be a problem, although if your leather piece is natural/unfinished you will notice it darkening considerably, but it'll go back to it's usual color after a couple of days.

Do be careful about the salt water though, it does mess up the leather in weird ways (leather soaked in salt water can curl and/or wrinkle after drying).
