Marking for Style

I prefer to use Two weapons that meet the minimum requirement for Class II weapons. I use them in the fashion of Florentine but on occasion I use will drop one as a switch to give myself the ability to destroy shields. Would these be marked as Class II or as Class I & II?

Mark them Class II.

Regardless of how you intend to use a weapon, it will be tested and marked for what it actually is. If it is 48" or greater, it will be tested and classified as red (class II). When swung one-handed, it still only counts as blue (class I), but it is a class II weapon.
