I don't see why not. But when I think clubs, I think of something with no flat edges, and thus no 'ends' persay. Are you proposing to build some sort of paddle? I guess I'd have to see your final design, but I can't think of a reason why (if padded correctly) a one-edged club wouldn't be legal. But, on the other hand, I don't see why you'd want one.

as long as the non-striking sides are marked with tape to obviously denote that they are not striking surfaces, it's legal.

but how would a one-sided mace be different from an axe/hammer?

and how would a one-sided club be different from a one sided sword?

it would like very much like a Muslim club, from KOH. but why limit yourself to such a limited weapon?
