Are weapons such as a Sai considered entangling? I assume if it can trap a weapon it can also trap an arm or leg. Not sure if that is what is meant by entangling weapons. I know other weapons are an obvious no go, but what are the rules if any for multiprong blades?

Personally, I would recommend against multi-pronge weapons. One good hit and it breaks. Unless you heat treat and fuse pvc so that every point has a core in it, but even still it's not incredibly effective.
I suggest just pumping out some swords at first. Maybe flails. Chances are your weapons won't last very long if your just starting out on foam smithing, and you pick up tricks as you go.

^What Muffin said. Weapons with joints break, and are usually mostly ineffective. Build the basics first. If you haven't already, check out the how-to-build section on the Geddon; it's a good resource.
