You can do anything you want to a rock or javelin, catch it, block it, parry it, whatever. Be careful with javelins, because parrying them has a tendency to just spin them around and clonk someone in the head with the haft.
... which is also the real main reason why you can never parry an arrow. If you do, it will start spinning, and someone's at least as likely to get hit with the nock as the head, which is really not so much a good thing.
